I have been looking for cooked ham and bacon products that have NO added sugar or nitrates and I don't know about you but its almost impossible. Considering the Brain Food diet should be high in Protein and having a child who loves bacon and ham I started to look for some alternatives to the supermarket branded Ham and Bacon as all of the supermarket brands have a long list of the unwanted additives, some really nasty ones which I also found in gammon and other luncheon meat I was using in the kids school boxes.

I have found two farm companies that will cure or smoke the ham to my own requirements and one company who sells nitrate free bacon, ham and other excellent meats too!

I am in the process of ordering a leg of ham smoked with only the necessary added salt (which has to be used) and assuming that I wont need to take a second mortgage I hope to buy one on a regular basis.

In Australia you can purchase a whole leg of ham which you would keep in a vinegar muslin. It lasts of ages because you only cut off what you need at the time reducing the amount of surface area on the meat . When meat is pre-cut into slices it goes off more quickly so purchasing a whole leg might make economical sense as well as giving us a whole raft of meat for all types of meals. And if you cant use it all at once just cut off chunks and freeze!

You are brilliant.
I will have a look at both those sites. I have never been able to find additive free ham/gammon and my son loves it. I didnt think it was sold at all.
